Description

Delightful cranberry crumble bars that perfectly balance sweet and tart flavors with a chewy, buttery topping.


Ingredients

  • 2 cups fresh or frozen cranberries
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a bowl, combine cranberries, granulated sugar, lemon juice, and vanilla extract. Mix well and set aside.
  3. In another bowl, combine flour, oats, brown sugar, baking powder, salt, and cinnamon. Add melted butter and mix until crumbly.
  4. Press half of the crumb mixture into the baking dish for the base. Spread the cranberry mixture on top and sprinkle with remaining crumb mixture. Bake for 35-40 minutes until golden brown. Let cool before cutting.

Notes

Serve with whipped cream or a scoop of vanilla ice cream. Store in an airtight container for up to 3 days.
