Ingredients

- 2 cups fresh or frozen cranberries
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
- In a bowl, combine cranberries, granulated sugar, lemon juice, and vanilla extract. Mix well and set aside.
- In another bowl, combine flour, oats, brown sugar, baking powder, salt, and cinnamon. Add melted butter and mix until crumbly.
- Press half of the crumb mixture into the baking dish for the base. Spread the cranberry mixture on top and sprinkle with remaining crumb mixture. Bake for 35-40 minutes until golden brown. Let cool before cutting.
Notes
Serve with whipped cream or a scoop of vanilla ice cream. Store in an airtight container for up to 3 days.
