- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled bacon
- 1/2 cup sour cream
- 3 green onions, sliced
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly under running water. Using a fork, pierce each potato several times, rub them with olive oil, and sprinkle with salt.
- Place the prepared potatoes directly on the oven rack and bake for about 45-60 minutes until they are tender when pierced with a knife.
- Remove the potatoes from the oven and allow them to cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, ensuring to leave a small border around the edge to keep the skins sturdy.
- Brush the insides of the potato skins with olive oil and season with salt and pepper. Place them cut side up on a baking sheet and bake for an additional 10 minutes until they are crispy and golden.
- Remove the crispy potato skins from the oven and fill each one generously with shredded cheese and crumbled bacon.
- Return the filled potato skins to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.
- Take the potato skins out of the oven and top them with dollops of sour cream and sliced green onions before serving.
Notes
For extra crispiness, broil the skins for a minute after baking. Customize toppings to your liking.
