Delicious loaded potato skins topped with cheese, bacon, and green onions, perfect for parties and gatherings.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • 3 green onions, sliced
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly under running water. Using a fork, pierce each potato several times, rub them with olive oil, and sprinkle with salt.
  2. Place the prepared potatoes directly on the oven rack and bake for about 45-60 minutes until they are tender when pierced with a knife.
  3. Remove the potatoes from the oven and allow them to cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, ensuring to leave a small border around the edge to keep the skins sturdy.
  4. Brush the insides of the potato skins with olive oil and season with salt and pepper. Place them cut side up on a baking sheet and bake for an additional 10 minutes until they are crispy and golden.
  5. Remove the crispy potato skins from the oven and fill each one generously with shredded cheese and crumbled bacon.
  6. Return the filled potato skins to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.
  7. Take the potato skins out of the oven and top them with dollops of sour cream and sliced green onions before serving.

Notes

For extra crispiness, broil the skins for a minute after baking. Customize toppings to your liking.
