A delicious and guilt-free paleo banana bread that is simple to make and perfect for breakfast or a snack.
Ingredients

- 3 ripe bananas
- 3 large eggs
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups almond flour
- 1 tsp cinnamon (optional)
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Mash the ripe bananas in a mixing bowl until smooth, then stir in the eggs, melted coconut oil, and vanilla extract.
- Add baking soda, salt, almond flour, and cinnamon, mixing until just combined. Optionally fold in nuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick comes out clean. Let cool before transferring to a wire rack.
Notes
Store in an airtight container for up to 3 days or refrigerate for up to a week. Freeze individual slices for up to 3 months.
