Description

A delicious and guilt-free paleo banana bread that is simple to make and perfect for breakfast or a snack.


Ingredients

  • 3 ripe bananas
  • 3 large eggs
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups almond flour
  • 1 tsp cinnamon (optional)
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas in a mixing bowl until smooth, then stir in the eggs, melted coconut oil, and vanilla extract.
  3. Add baking soda, salt, almond flour, and cinnamon, mixing until just combined. Optionally fold in nuts or chocolate chips.
  4. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick comes out clean. Let cool before transferring to a wire rack.

Notes

Store in an airtight container for up to 3 days or refrigerate for up to a week. Freeze individual slices for up to 3 months.
