- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup dried cranberries
- Zest of 1 orange
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar in a large bowl until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Fold in the dried cranberries, orange zest, and nuts (if using).
- Drop spoonfuls of dough onto a lined baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes or until edges are lightly golden.
- Let cool on the baking sheet before transferring to a wire rack to cool completely.
