Instructions
- Preheat your oven to 425°F (220°C). Peel and chop the sweet potatoes into bite-sized pieces.
- In a large bowl, toss the sweet potatoes with olive oil, brown sugar, salt, cinnamon, and pepper until evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, stirring halfway through.
