- 2 cups cooked rice
- 1 cup beef, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 2 green onions, sliced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef and stir-fry until browned (3-4 minutes). Remove and set aside.
- Add another tablespoon of oil to the skillet. Toss in mixed vegetables and stir-fry for 2-3 minutes until softened.
- Push vegetables to one side and scramble the beaten eggs on the other side for about 2 minutes.
- Add the cooked rice and beef back to the skillet. Pour in soy and oyster sauce, stirring well. Cook for 3-5 minutes until heated through. Stir in green onions and season with salt and pepper before serving.
Notes
For best results, use day-old rice to avoid mushiness. Customize with your favorite vegetables or proteins.
