- 2 large sweet potatoes
- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 1 cup corn (canned or frozen)
- 1 cup black beans, rinsed and drained
- 1 avocado, sliced
- 1/2 cup Greek yogurt or sour cream
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C). Wash and pierce the sweet potatoes with a fork, then microwave on high for 5-8 minutes until tender. Alternatively, you can wrap them in foil and bake in the oven for about 45 minutes.
- Combine the shredded chicken with BBQ sauce in a pan and heat through, stirring occasionally until fully coated and warmed up.
- Cut the cooked sweet potatoes in half and fluff the insides with a fork.
- Layer the chicken mixture on top of the sweet potatoes, then add corn, black beans, and avocado slices. Top with Greek yogurt or sour cream, and season with salt and pepper to taste. Finish with fresh cilantro.
Notes
