- 4 large baking potatoes
- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C). Wash the potatoes, poke holes with a fork, drizzle with olive oil, and season with salt and pepper. Bake for 45-60 minutes.
- Mix shredded chicken with BBQ sauce in a bowl.
- Once potatoes are cool, cut in half lengthwise and scoop out some flesh.
- Combine scooped potato flesh with sour cream and some green onions, then fill potato halves with BBQ chicken mixture, top with cheddar cheese, and return to oven for 10-15 minutes until cheese is melted.
- Garnish with remaining green onions before serving.
