A hearty dish combining baked potatoes with savory BBQ chicken, perfect for family dinners or casual gatherings.


Ingredients

  • 4 large baking potatoes
  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the potatoes, poke holes with a fork, drizzle with olive oil, and season with salt and pepper. Bake for 45-60 minutes.
  2. Mix shredded chicken with BBQ sauce in a bowl.
  3. Once potatoes are cool, cut in half lengthwise and scoop out some flesh.
  4. Combine scooped potato flesh with sour cream and some green onions, then fill potato halves with BBQ chicken mixture, top with cheddar cheese, and return to oven for 10-15 minutes until cheese is melted.
  5. Garnish with remaining green onions before serving.
