A delicious and satisfying meal that combines savory meatballs with a creamy, vibrant avocado sauce, perfect for weeknight dinners or gatherings.


Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1 beaten egg
  • 1 medium onion, chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup barbecue sauce
  • 2 ripe avocados
  • 1 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice
  • 1 clove garlic
  • 1/2 cup water (adjust as needed)
  • 1 cup corn
  • 1 cup black beans
  • 1/2 red onion, sliced
  • 1 diced avocado
  • Cooked rice for serving

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, beaten egg, chopped onion, garlic powder, salt, and black pepper. Mix until just combined.
  2. Shape the mixture into 16 meatballs, each about 1½ inches in diameter.
  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and brown them on all sides for about 6-8 minutes.
  4. Pour barbecue sauce into the skillet with the meatballs. Reduce heat to low and let simmer for 5 minutes, turning to coat evenly.
  5. In a blender, combine avocado, Greek yogurt, mayonnaise, cilantro, lime juice, garlic, water, salt, and pepper. Blend until smooth.
  6. Divide cooked rice among four bowls. Top with corn, black beans, red onion, diced avocado, and barbecue meatballs. Drizzle with avocado goddess sauce and garnish with cilantro.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The avocado goddess sauce can be made ahead and stored separately.
