- 1/4 cup green onions, chopped
- 1/2 cup mixed vegetables (peas, carrots, corn)
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sriracha (or to taste)
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large pan over medium heat.
- Add garlic and ginger; sauté until fragrant.
- Stir in mixed vegetables and cook until tender.
- Add shrimp (or chicken/tofu) and cook until heated through.
- Add the cooked rice and stir to combine.
- Pour in soy sauce and sriracha; mix thoroughly.
- Cook for a few more minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Garnish with chopped green onions and serve immediately.
Notes
Use day-old rice for the best texture. Adjust sriracha to your spice preference.
