Ingredients

  • 2 cups cooked rice
  • 1/2 cup cooked shrimp (or chicken/tofu)
  • 1/4 cup green onions, chopped
  • 1/2 cup mixed vegetables (peas, carrots, corn)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha (or to taste)
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large pan over medium heat.
  2. Add garlic and ginger; sauté until fragrant.
  3. Stir in mixed vegetables and cook until tender.
  4. Add shrimp (or chicken/tofu) and cook until heated through.
  5. Add the cooked rice and stir to combine.
  6. Pour in soy sauce and sriracha; mix thoroughly.
  7. Cook for a few more minutes, stirring occasionally.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped green onions and serve immediately.

Notes

Use day-old rice for the best texture. Adjust sriracha to your spice preference.
