- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas with a fork until smooth.
- Stir in melted butter, then add baking soda and salt.
- Incorporate sugar, beaten egg, and vanilla extract into the batter.
- Gently stir in the flour until just incorporated.
- Pour the batter into a muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring to a wire rack.
Notes
Ensure bananas are very ripe for better flavor. Avoid overmixing for tender muffins.
