Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir in melted butter, then add baking soda and salt.
  4. Incorporate sugar, beaten egg, and vanilla extract into the batter.
  5. Gently stir in the flour until just incorporated.
  6. Pour the batter into a muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes until a toothpick comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring to a wire rack.

Notes

Ensure bananas are very ripe for better flavor. Avoid overmixing for tender muffins.
