Ingredients

  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas with a fork until smooth and stir in the melted butter.
  3. Mix in the baking soda and salt, then add sugar, egg, and vanilla extract, mixing until combined.
  4. Sprinkle the flour over the mixture and stir until just combined; fold in chocolate chips gently.
  5. Pour the batter into muffin cups, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow to cool before serving.

Notes

Use very ripe bananas for maximum sweetness. Don’t overmix to avoid dense muffins.
