- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the ripe bananas with a fork until smooth and stir in the melted butter.
- Mix in the baking soda and salt, then add sugar, egg, and vanilla extract, mixing until combined.
- Sprinkle the flour over the mixture and stir until just combined; fold in chocolate chips gently.
- Pour the batter into muffin cups, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
Use very ripe bananas for maximum sweetness. Don’t overmix to avoid dense muffins.
