Description

Delicious and fluffy blueberry muffins with a golden top and crunchy topping, perfect for breakfast or snacks.


Ingredients

  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • 1/4 cup brown sugar (for topping)
  • 1/4 cup flour (for topping)
  • 1/4 cup oats (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Mix together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. Whisk together the melted butter, buttermilk, eggs, and vanilla extract until smooth and creamy.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the fresh blueberries gently.
  6. Mix together the brown sugar, flour, oats, and cinnamon for the topping.
  7. Fill the muffin cups about 2/3 full with batter and sprinkle the topping mixture on top.
  8. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Let them cool slightly before transferring to a wire rack.

Notes

Serve warm with butter or honey. Store in an airtight container for up to 3 days.
