- 4 medium zucchini
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C). Cut the zucchini in half lengthwise and scoop out the center to create ‘boats’.
- Brush the inside of the zucchini boats with olive oil. Season with salt and pepper.
- Place the zucchini boats cut side up on a baking sheet and fill each with marinara sauce.
- Sprinkle mozzarella and Parmesan cheese evenly over the tops.
- Bake for 25-30 minutes until zucchini is tender and cheese is bubbling and golden.
- Let cool for a few minutes and garnish with fresh basil before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven at 350°F (175°C).
