- 1 lb fresh salmon, skin removed
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup green onions, chopped
- 1 egg, beaten
- 1 tbsp Dijon mustard
- 1 tbsp fresh dill, chopped
- Salt and pepper to taste
- 2 ripe avocados
- 1/4 cup Greek yogurt
- 1 tbsp lime juice
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine the fresh salmon, breadcrumbs, grated Parmesan, chopped green onions, beaten egg, Dijon mustard, dill, and a pinch of salt and pepper in a large bowl. Mix thoroughly until well combined.
- Form the salmon mixture into meatballs, about the size of a golf ball, and place them on the prepared baking sheet.
- Bake for 15-20 minutes or until completely cooked through and slightly golden on the outside.
- Prepare the creamy avocado sauce by blending ripe avocados, Greek yogurt, lime juice, and a pinch of salt until smooth and creamy.
- Serve the baked salmon meatballs hot, with the creamy avocado sauce on the side for dipping.
