  • 1 lb fresh salmon, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup green onions, chopped
  • 1 egg, beaten
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh dill, chopped
  • Salt and pepper to taste
  • 2 ripe avocados
  • 1/4 cup Greek yogurt
  • 1 tbsp lime juice
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine the fresh salmon, breadcrumbs, grated Parmesan, chopped green onions, beaten egg, Dijon mustard, dill, and a pinch of salt and pepper in a large bowl. Mix thoroughly until well combined.
  3. Form the salmon mixture into meatballs, about the size of a golf ball, and place them on the prepared baking sheet.
  4. Bake for 15-20 minutes or until completely cooked through and slightly golden on the outside.
  5. Prepare the creamy avocado sauce by blending ripe avocados, Greek yogurt, lime juice, and a pinch of salt until smooth and creamy.
  6. Serve the baked salmon meatballs hot, with the creamy avocado sauce on the side for dipping.
