- 4 fillets Cod (thick, white cod fillets)
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 tablespoons Olive Oil (for sautéing)
- 1 medium Onion (sauté until translucent)
- 2 cloves Garlic (minced)
- 1 tablespoon Ginger (grated)
- 1 can Coconut Milk (full-fat preferred)
- 3 tablespoons Lemon Juice (freshly squeezed)
- 1 teaspoon Lemon Zest
Instructions
- Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper. Pat the cod fillets dry and season both sides with salt and pepper.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it turns translucent, about 3-4 minutes. Then, stir in the minced garlic and grated ginger and cook for another 1-2 minutes until fragrant.
- Pour in the coconut milk, lemon juice, and lemon zest. Stir to combine and let the sauce cook for about 5 minutes, allowing it to thicken slightly. Once ready, carefully place the cod fillets in the baking dish, and pour the coconut lemon cream sauce over the top.
- Bake in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork. Keep an eye on it to make sure it doesn’t overcook.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to maintain texture.
