Ingredients

  • 4 fillets Cod (thick, white cod fillets)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Olive Oil (for sautéing)
  • 1 medium Onion (sauté until translucent)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • 1 can Coconut Milk (full-fat preferred)
  • 3 tablespoons Lemon Juice (freshly squeezed)
  • 1 teaspoon Lemon Zest

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper. Pat the cod fillets dry and season both sides with salt and pepper.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it turns translucent, about 3-4 minutes. Then, stir in the minced garlic and grated ginger and cook for another 1-2 minutes until fragrant.
  3. Pour in the coconut milk, lemon juice, and lemon zest. Stir to combine and let the sauce cook for about 5 minutes, allowing it to thicken slightly. Once ready, carefully place the cod fillets in the baking dish, and pour the coconut lemon cream sauce over the top.
  4. Bake in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork. Keep an eye on it to make sure it doesn’t overcook.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to maintain texture.
