- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1 cup bell peppers, diced
- 1 cup onions, diced
- 1 teaspoon taco seasoning
- 8 flour tortillas
- Cooking spray or olive oil
- Sour cream and salsa for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix the shredded chicken, cheese, diced bell peppers, diced onions, and taco seasoning until well combined.
- Lay a tortilla flat and spoon some chicken mixture onto one half. Fold the other half to create a half-moon shape.
- Repeat with remaining tortillas and filling. Place on a baking sheet, spray the tops with cooking spray. Bake for 15-20 minutes until golden brown and crispy.
- Remove from oven, cut into wedges, and serve warm with sour cream and salsa.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350°F.
