Description

A delightful breakfast or nutritious snack made with creamy cottage cheese, wholesome oats, and sweet bananas, topped with juicy blueberries.


Ingredients

  • 2 cups cottage cheese
  • 2 eggs
  • 1 cup rolled oats
  • 1 ripe banana
  • 1/4 cup maple syrup
  • 1/2 teaspoon baking soda
  • 1 cup fresh blueberries
  • Non-stick cooking spray

Instructions

  1. Preheat the oven to 350°F (180°C). Spray four 2-cup oven-safe bowls with non-stick cooking spray and place them on a baking sheet.
  2. In a blender, combine cottage cheese, eggs, oats, banana, maple syrup, and baking soda. Blend until smooth, adding milk if necessary to achieve the right consistency.
  3. Pour the batter into the bowls, filling each about two-thirds full. Top with fresh blueberries, pressing some into the batter.
  4. Bake for 35 to 40 minutes, until golden brown and firm to the touch. Allow to cool for 10 minutes before serving.

Notes

These bowls can be topped with extra maple syrup, yogurt, or nuts. They store well in the fridge for up to 3 days or can be frozen for up to 3 months.
