Delightful, bite-sized cookies that capture the nostalgic flavors of traditional apple pie with a buttery, crisp exterior.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup diced apples
  • 1 tablespoon lemon juice
  • 1 egg yolk
  • 1 tablespoon milk
  • 1/2 cup brown sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, sugar, salt, and cinnamon until evenly combined.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in the diced apples and lemon juice.
  5. In a separate bowl, whisk the egg yolk and milk together.
  6. Add the egg and milk mixture to the apple mixture, and mix until combined.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes or until golden brown.
  9. Let cool before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. They reheat well for that fresh-baked experience.
