- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup diced apples
- 1/2 cup chopped nuts (optional)
- 6 tablespoons butter, cold and cubed
- 1/3 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix together 1 cup of flour, oats, brown sugar, granulated sugar, baking powder, salt, and cinnamon.
- In another bowl, combine the melted butter, eggs, and vanilla extract. Stir in the diced apples and nuts, if using.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- In a small bowl, mix together 6 tablespoons of cold cubed butter, 1/3 cup of flour, brown sugar, and cinnamon until it resembles coarse crumbs.
- Spoon the muffin batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
- Sprinkle the crumble topping evenly over each muffin.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before transferring to a wire rack.
Notes
These muffins are great warm or at room temperature. Store in an airtight container for up to 3 days, or freeze for up to 2 months.
