Description

Delicious muffins filled with tender apples and topped with a sweet crumbly topping, perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced apples
  • 1/2 cup chopped nuts (optional)
  • 6 tablespoons butter, cold and cubed
  • 1/3 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together 1 cup of flour, oats, brown sugar, granulated sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine the melted butter, eggs, and vanilla extract. Stir in the diced apples and nuts, if using.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a small bowl, mix together 6 tablespoons of cold cubed butter, 1/3 cup of flour, brown sugar, and cinnamon until it resembles coarse crumbs.
  6. Spoon the muffin batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
  7. Sprinkle the crumble topping evenly over each muffin.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool slightly before transferring to a wire rack.

Notes

These muffins are great warm or at room temperature. Store in an airtight container for up to 3 days, or freeze for up to 2 months.
