- 1 cup almond flour
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Butter or coconut oil for cooking
Instructions
- Whisk the almond flour, baking powder, and salt in a bowl.
- Beat the eggs in another bowl until light and frothy, then add almond milk and vanilla extract.
- Gently fold the wet mixture into the dry ingredients until combined.
- Heat a non-stick skillet over medium heat and add butter or coconut oil.
- Pour about 1/4 cup of batter for each pancake into the skillet.
- Cook until bubbles form, then flip and cook until golden brown.
- Serve warm with your favorite toppings.
Notes
Make sure the skillet is hot enough before adding batter to prevent sticking. Consider doubling the recipe for meal prep.
