- 1 cup almond flour
- 4 egg whites
- 3/4 cup granulated sugar
- 1/4 cup powdered sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 2 tablespoons butter, softened
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, beat egg whites until soft peaks form, then gradually add granulated sugar until stiff peaks form.
- Fold in almond flour and powdered sugar gently into the meringue mixture.
- Pipe circles of the meringue onto prepared baking sheets and bake for 25-30 minutes until dry and crisp.
- Allow meringues to cool completely on baking sheets.
- Whip the heavy cream until soft peaks form and fold in vanilla extract and softened butter for the cream filling.
- Assemble by spreading cream filling between two meringue layers and repeat until all are used.
- Chill the assembled clouds in the refrigerator for 1 hour before serving.
Notes
Best enjoyed within 2-3 days. Can be frozen before assembling with the cream filling.
