Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the almond flour, all-purpose flour, sugar, baking powder, and salt.
- Cream together the softened butter, egg, and vanilla extract until smooth and fluffy.
- Gradually add the dry ingredients to the wet mixture until combined.
- Roll the dough into small balls, about 1 inch in diameter, and place on a lined baking sheet.
- Flatten each ball slightly with your hand.
- Bake for 10-12 minutes until the edges are golden.
- Cool on a wire rack before serving.
