Description

A spectacular homemade cake to celebrate an 18th birthday, featuring light and fluffy layers with smooth buttercream frosting.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • Buttercream frosting
  • Decorations (e.g., candles, edible glitter)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the flour mixture to the creamed mixture, alternating with the milk. Mix until just combined. Divide the batter evenly between the two prepared pans.
  4. Bake for 25-30 minutes, or until a toothpick comes out clean. Allow cakes to cool in pans for 10 minutes, then turn them out onto wire racks to cool completely.
  5. Once cooled, frost with buttercream frosting and decorate as desired.

Notes

Store leftover cake in an airtight container at room temperature for up to 3 days. Wrap tightly for longer storage in the fridge or freeze for up to 3 months.
